Since I’ve been trying to eat a little more clean, and incorporate as much vegetarian/vegan recipes into my daily routine as I can, I decided I’d share what I ate on a regular day recently:
- Vegan Waffles
|} Recipe here!
- Potato & Cheese Quesadilla
|} Peel skin and cut 1 potato into cubes. Boil until soft, then drain water and smash up
|} Spread mashed potato onto a tortilla, add cheese on top and cover with a second tortilla. Warm up on stove until the cheese has melted!
- Vegan Apple Cinnamon Cake
|} I changed up the recipe a bit and wasn’t that impressed but it’s probably better the right way! Link to mug cake here!
- Jennifer’s Garden-Vegetable Spring Rolls
- Chips & Salsa
- Homemade Pad Thai
|} Boil water and remove from heat; add rice noodles and let sit for about 10 minutes (cover for additional steaming). Drain water and rinse noodles with cold water, set the noodles aside.
|} Cut chicken into cubs and cook & season like you normally would. Chop up a few onions and add to cooked chicken.
|} Add chicken to noodles and pour in as much Pad Thai sauce as directed on the jar for your amount of servings.
